I’ve yet to have it explained to me how the concept of an “adoptable” makes any more sense than the concept of an “NFT.”

In and of itself, it doesn't, but since the adoptables people know they're running on the honor system they have to make their JPGs actually appealing to get people to buy them, instead of just shouting 'blockchain! scarcity! this is an investment somehow!' So they've at least got that going for them.
